Ingredients

Scale
  • 1 pound short pasta uncooked
  • 1 pound shrimp peeled, deveined, thawed if frozen
  • 14 ounces smoked pork sausage
  • 1 tablespoon
  • 15 ounce can of diced tomatoes with juices
  • 1 tablespoon  or 4 cloves of garlic, minced
  • 1 heaping cup of diced onions 1 large onion
  • 1 heaping cup of red bell pepper slices 1-2 bell peppers
  • 1/2 cup heavy cream
  • 1/2 teaspoon of red pepper flakes
  • 1 teaspoon smoked paprika
  • 5 green onions
  • parsley

Instructions

  1. First, cook your pasta until it’s al dente according to package instructions. Drain it and set it aside.
  2. In the same pot, heat up the olive oil and add in the sausage. Cook over medium-high heat until golden brown.
  3. When the sausage is browned, add the onions, the whites of the green onion and the bell pepper. Don’t add the garlic yet! Cook until softened.
  4. Then add the shrimp, and give it a couple of stirs until it goes from translucent to white-ish. It should start to firm up.
  5. To that, we add in the spices and garlic. Saute until fragrant and golden brown.
  6. When the garlic is golden, stir until incorporated with the other ingredients.
  7. Then, add in the diced tomatoes and stir to combine. Let it cook a few short minutes at a simmering bubble.
  8. Finally, pour in the cream and the green onions. Stir them until incorporated.
  9. Add salt and pepper to taste, and stir to combine.
  10. Turn off the heat, then add in the cooked pasta and parsley. Stir gently to coat.
  11. Let it sit in the pan for a few minutes and stir occasionally so it gets creamier.
  12. Serve with fresh parsley and freshly grated Parmesan!
