Description

This easy no bake berries and cream cake layers fluffy whipped cream, fresh berries, and a graham cracker or sponge base into a chilled dessert that’s light, refreshing, and totally oven-free.


Ingredients

  • 2 cups mixed berries (fresh or thawed strawberries, blueberries, raspberries)

  • 1½ cups heavy whipping cream (or coconut cream for dairy-free)

  • ½ cup mascarpone or cream cheese (optional)

  • ¼ cup powdered sugar

  • 1 tsp vanilla extract or lemon zest

  • 1 pack graham crackers, ladyfingers, or sponge cake slices


Instructions

  1. Whip the Cream: In a chilled mixing bowl, whip cream until soft peaks form. Add powdered sugar, vanilla, and mascarpone if using. Continue whipping to stiff peaks.

  2. Prepare Base: Line a dish or dessert cups with your chosen base (graham crackers, cake slices, etc.). Lightly soak in milk or berry juice if needed.

  3. Layer It Up: Spread a layer of whipped cream over the base, then add a layer of berries. Repeat with remaining layers.

  4. Chill: Cover and refrigerate for at least 4 hours or overnight.

  5. Serve: Garnish with whole berries and mint. Slice cleanly and serve chilled.
