Description
This easy no bake berries and cream cake layers fluffy whipped cream, fresh berries, and a graham cracker or sponge base into a chilled dessert that’s light, refreshing, and totally oven-free.
Ingredients
2 cups mixed berries (fresh or thawed strawberries, blueberries, raspberries)
1½ cups heavy whipping cream (or coconut cream for dairy-free)
½ cup mascarpone or cream cheese (optional)
¼ cup powdered sugar
1 tsp vanilla extract or lemon zest
1 pack graham crackers, ladyfingers, or sponge cake slices
Instructions
Whip the Cream: In a chilled mixing bowl, whip cream until soft peaks form. Add powdered sugar, vanilla, and mascarpone if using. Continue whipping to stiff peaks.
Prepare Base: Line a dish or dessert cups with your chosen base (graham crackers, cake slices, etc.). Lightly soak in milk or berry juice if needed.
Layer It Up: Spread a layer of whipped cream over the base, then add a layer of berries. Repeat with remaining layers.
Chill: Cover and refrigerate for at least 4 hours or overnight.
Serve: Garnish with whole berries and mint. Slice cleanly and serve chilled.
Notes
Use thawed and drained berries to prevent sogginess.
Coconut cream or dairy-free whip works great for vegan versions.
Add lemon zest or a drizzle of berry sauce for extra flavor pop.
