Looking for a new lunch idea? Try this meatball wrap! A tortilla is filled with savoury meatballs and lots of delicious toppings, like baby spinach, onion, avocado, tomatoes, cheese and tortilla strips. With lots of flavour and texture in this homemade wrap, you’ll want to give this recipe a try!

- 2 tablespoons mayonnaise
- 2 teaspoons buffalo sauce, or to taste
- 1 9-inch flour tortilla
- 1 small handful baby spinach
- 2 tablespoons thinly sliced onion, like red, yellow or shallot
- 4 grape tomatoes, sliced
- ½ avocado, sliced
- 2 tablespoons shredded cheddar cheese
- 3 to 4 cooked meatballs, heated through to reheat if not freshly made
- 2 tablespoons tortilla strips
Instructions
- In a small bowl, add the mayonnaise and buffalo sauce and whisk to combine.
- Spread 1 tablespoon of the mayonnaise/buffalo sauce mixture in the centre of the tortilla.
- Layer on spinach, onion, tomatoes, avocado and cheddar cheese. Top with the cooked meatballs and tortilla strips. Drizzle with the remaining mayonnaise/buffalo sauce mixture. Fold into a wrap.
- Optional: Heat a skillet over medium heat, then add the wrap. Heat for a couple of minutes on both sides just to get a little colour on the outside.
