- 1/4 cup milk (optional)
- 1 cup cooked chicken (shredded or diced)

- 1 small onion (diced)
- 1 bell pepper (diced)
- 1 cup spinach (optional)
- 2 cloves garlic (minced)
- Salt and pepper (to taste)
- 2 tbsp olive oil or butter
Instructions
- Preheat oven to 375°F.
- Whisk eggs, milk (if using), salt, and pepper.
- Sauté onion, bell pepper, and garlic in olive oil until softened. Add spinach if desired.
- Mix in cooked chicken and pour the egg mixture over.
- Sprinkle cheese on top and transfer skillet to the oven.
