Instructions

Step 1: Prepare the Chickpeas

  • Drain and rinse the chickpeas under cold water to remove excess sodium.
  • For a creamier texture, mash about ¼ of the chickpeas using a fork.

Step 2: Chop the Vegetables

  • Dice the cucumber, cherry tomatoes, red onion, and bell pepper into small, bite-sized pieces.

Step 3: Make the Dressing

  • In a small bowl, whisk together Greek yogurt, lemon juice, olive oil, garlic powder, salt, black pepper, and Dijon mustard until smooth.
