Ingredients
2 cups cooked shredded chicken (rotisserie or baked)
1 package (16 oz) potato gnocchi (shelf-stable or fresh)
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 cups low-sodium chicken broth
1 cup milk or heavy cream
½ cup frozen peas
½ cup diced carrots
¼ cup diced onions
1 clove garlic, minced
½ teaspoon dried thyme
Salt and black pepper to taste
Optional: ¼ teaspoon paprika or nutmeg for added warmth
Optional toppings: shredded parmesan, fresh parsley
Instructions
Sauté the veggies: In a large skillet, melt butter over medium heat. Add onions, carrots, and sauté until soft (5–6 minutes). Add garlic and thyme, cook 1 more minute.

Optional bake: For a golden crust, transfer to baking dish, top with biscuits or cheese, and bake at 375°F for 12–15 minutes.
