Crust:

- 3 large eggs
- 1 tsp vanilla extract
- ½ cup sour cream
Chocolate Mousse Topping:
- 1 ½ cups heavy whipping cream
- 2 cups semisweet chocolate chips
- ¼ cup powdered sugar
Instructions
- Make the Crust: Mix graham cracker crumbs, sugar, and melted butter. Press into a springform pan and bake at 325°F for 10 minutes.
- Prepare the Cheesecake Layer: Beat cream cheese and sugar until smooth. Add eggs, vanilla, and sour cream. Pour over the crust and bake in a water bath for 55–60 minutes. Cool completely.
- Make the Mousse: Melt chocolate chips and cool slightly. Whip heavy cream with powdered sugar until stiff peaks form, then fold in the chocolate.
- Assemble: Spread the mousse over the chilled cheesecake. Add toppings like whipped cream or shaved chocolate, if desired. Chill for 1 hour before serving.
