- 8 oz pasta (spaghetti, rigatoni, or pappardelle)
- 1 ball fresh burrata cheese
- 2 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- 1 ½ cups cherry tomatoes, halved
- ½ tsp crushed red pepper flakes (optional)
- Salt & black pepper to taste
- ¼ cup reserved pasta water
- Fresh basil leaves, for garnish
- Lemon zest (optional)
Instructions
Cook Pasta: Boil salted water, cook pasta al dente, and reserve ¼ cup pasta water.
Prepare Sauce: In a pan, heat olive oil, sauté garlic, and add cherry tomatoes. Cook until soft.
Combine: Toss cooked pasta into the sauce, adding reserved pasta water to create a light coating.
Add Burrata: Turn off heat, tear burrata over the pasta, and let it melt slightly.
Finish & Serve: Garnish with basil, a drizzle of olive oil, and lemon zest. Serve immediately.
