Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 15.5 oz can black beans drained and rinsed
  • 1 small onion diced
  • 1 4 oz can green chilies
  • 1 clove garlic minced
  • 3 tablespoons Cream Cheese
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • 2 burrito size flour tortillas
  • ½ cup shredded cheddar cheese plus extra for garnish

Instructions

  1. Heat the extra virgin olive oil in a skillet on medium high heat.
  2. Add the onion, garlic, and green chilies, cook and occasionally stir for about 2 minutes.
  3. Next add in the black beans, cook and stir for about 3 minutes so everything is heated through.
  4. Add the cream cheese, salt and pepper stirring until the cheese is melted and mixture is hot.
  5. Wrap the tortillas in damp paper towels and microwave for about 30 seconds.
  6. Remove the skillet from heat and spoon the mixture into the center of the tortillas.
  7. Add the shredded cheddar cheese, roll up the tortilla, and garnish with more cheese.
  8. Serve immediately
